✧・゚:* Chicken Sopa *:・゚✧


5-7 c of distilled or purified water

3 – 4 Chicken breasts or 1 Whole Chicken

½ Cebolla big chunks or Julienne

3 – 4 Garlic cloves crushed

2 - 3 Chicken bouillon cube (this has salt)

2 tsp Ground or Fresh grated Ginger

1 – 2 tsp of Apple Cider Vinegar

1 tsp of nutmeg

2 tbsp of Ground Cayenne

2 Bay leaves

1 - 2 Tomatoes

Enough water to submerge all the chicken.

Directions

Add water (preferably not from the tap) into a large stew pot over medium heat. Wait for it to get hot then add chicken bouillon cubes, cebolla, garlic, ginger, bay leaf, tomatoes, and cider. Cayenne can be adjusted for more or less heat. Let cook for 20 min then add the chicken.

If you want to add rice, papas, celery, or carrots do it 40 minutes after you put the chicken into the water. Wait ten min after adding your rice, papas etc. & taste again. Remove or add seasoning to your taste. Pepper, cilantro, and paprika to taste.


Cooking times

Chicken with bones can take up to 90 min to cook when left in big pieces. Rice takes 15-18 min to cook. It depends on the type of rice you use. Basmati is my fav. Potatoes take about 30 min to cook depending on size, bigger chunks take longer to cook. Try to keep potatoes, carrots & celery the same size to cook evenly. So add potatoes and rice at the right times. Test them by poking with a fork to determine tenderness.
